Here, I'll share with you my collection of Chinese Recipes, they came from newspapers, internet, books, and other sources. The recipes I share are special and some of them are considered authentic Chinese cuisines.

For about 5000 years Ancient Chinese people have been perfecting their Art of Chinese Traditional Cooking Styles.

From various kinds of Soup Dishes, Noodles, Dim Sum (Yum/Yam Cha), dumplings to Peking Ducks. Chinese Dishes especially Soup Dishes consist of various herbs and spices.
Some of the recipes have been developed for hundreds of years to be beneficial for health. And some have withstood the test of modern science.
There are also Secret Recipes that are being passed down from generation to generation only to the descendants of The Clan. These recipes are developed by The Elders and carefully passed down as Precious Heritage of the Clan.

Pueraria, Dried Oyster and Spare Rib Soup
Ingredients:
770 gr pueraria
2 oz dried oyster
350 gr spare rib
1/4 dried tangerine peel
4 red dates
Seasoning:
salt
How To:
1. Skin and wash pueraria, thickly slice vertically. Wash and soak dried oyster for about half an hour.
2. Wash and blanch spare rib into boiling water for a while. Rinse.
3. Soak and clean dried tangerine peel. Wash and remove pits from red dates.
4. Boil suitable amount of water together with the dried tangerine peel.
5. Add pueraria and cook for an hour.
6. Put in the rest of ingredients. Bring to a boil. Then parboil over medium heat for 2 hours. Stir in seasoning.
7. Serve hot.

Stewed Teal Duck with Chinese Cordyceps and Fish Maw
Ingredients:
1 teal duck (450 gr)
1 oz Chinese cordyceps
3 oz fish maw
5 oz lean pork
3 slices ginger
1 tbsp Shaoxing wine
1 braid garlic
Seasoning:
salt
How To:
1.Cut open and wash teal, drain. Soak Chinese cordyceps in warm water for a while, rinse.
2. Soak fish maw in warm water until soft, wash. Stir fry garlic. Sizzle wine.
3. Add 2 bowls water together with fish maw. Cover and cook for 15 minutes. Switch off. Leave for 20 minutes.
4. Take the fish maw and shred.
5. Wash lean pork, blanch in boiling water for a while and rinse.

Spare Ribs with Sour Plum
Ingredients:
350 gr spare ribs
a pinch of shredded red chilli
3 sour plums
1/2 tsp crushed garlic
1/2 tsp crushed shallot
1 tbsp soy bean paste
sectioned welsh onion
Marinade:
1 1/4 tsp oil
1 1/4 tsp sugar
1 1/4 tsp cornflour
1/2 tsp ginger sauce
a pinch of pepper
1 1/4 tsp light soy sacue
1/4 tsp wine
Method:
1. Rinse sour plums, remove pits and crush., combine with soy bean paste, garlic and shallot. Stir fry the mixture over low heat until fragrant. Allow to cool.
2. Wash and cut spare ribs into long strips then marinate for 1 hour.
3. Arrange spare ribs on plate. Pour prepared sour plum mixture on top.
4. Steam for 10 minutes over high heat. Add red chilli and welsh onion.
5. Steam for 1 minute more.
6. Serve hot.
