Chinese noodles believed to be first created between AD 25 and 220 are generally made from wheat flour, mung bean starch and rice flour. The color of the noodles generally comes from adding egg, iye or cereal to the wheat flour depending on the desired color. Wheat flour type Chinese noodles is more popular in northern China whereas rice noodles is more widely consumed in southern China. One of the reason why Chinese noodles are so popular is the cooking time. Most recipes require less than 5 minutes to finish cooking and easy to make. Generally Chinese noodles are boiled and may then be stir fried depending on the recipe. Some recipes also deep fried the noodles in oil until crispy.
