Beijing Cuisine
Beijing has been the capital city of China for centuries. The Beijing cuisine was influenced by people from all over China. One of the events that influenced the beijing cuisine the most was the Emperor's Kitchen, where kinds of cooking competitions were hold in order to to satisfy the Royal Family. . This event attracted cuisines from all over china. The beijing cuisine is also known as "Mandarin Cuisine".
Northeastern Chinese CuisineThe Northeastern Chinese Cuisine relies on the idea of preserved food and hearty fare. A very common form of preserving food is by Pickling which is traditionally done in most households in giant clay pickling vats. Unlike in the South of China, noodles are the most common form of starch rather than rice. Popular dishes include pork and chive dumplings, cumin & caraway lamb, congee, tealeaf stewed hardboiled eggs, congee with several types of pickles (mustard root is very popular), and cornmeal congee.
