A lot of things are different when you compare Japan to the USA, well most things actually. But one thing the two countries have in common is they both celebrate Valentine's day- except Japan's version is just a little bit special. On February 14th, in the land of the rising sun, many women, and only women, give out chocolate and gifts to men. They give simple
chocolate gifts to their co-workers, nicer and more personal chocolate gifts to their friends and relatives, and they save the best
chocolate for their boyfriends or husbands. It is a hierarchy of gift-giving, where everyone is included, from the obligatory gifts to colleagues, to the extra special gifts for that super special someone.
And the men, you ask? Men don't give gifts on Valentine's day. One month later, on March 14th, the men reciprocate their gifts on a day called White Day. There is a saying that goes hand in hand with this day: 'Sanbai Gaeshi,' which means "Triple the return." In other words, men are expected to give much nicer gifts than the ones they received.
Now while women commonly give Giri Choco (obligatory chocolate) to coworkers, and Honmei Choco (chocolate for romantic partners) to their boyfriends on Valentives Day, men commonly give white lingerie,
white chocolate,
cookies, or even jewelry to their special ladies. It is also common for the men to make the gifts they give their girlfriends or wives; mostly as a way of saying you're my only girl, but also maybe as a way of saving a little yen!

White Day began in the 70's, and was originally called Marshmallow day, because initially only marshmallows were given. It changed soon after, and many other gifts were exchanged. Most people claim it was created to give men a chance to return the favors for the gifts they received on Valentine's day, others say it was just a day started by candy companies to boost sales. Either way, it's a fun day to celebrate with that special someone.

You may choose to have the pastries shipped to you frozen at an extra cost, by overnight shipping or if you choose regular shipping the pastries should be kept refrigerated upon delivery. As with any good unfrozen pastry, they should be eaten soon after delivery and no later than one week from the time of delivery. They are tasty when slightly heated just before eating.

 | Preparing foods through dehydration has been a method of preservation for thousands of years. It is achieved by removing water from the food by evaporation using either sunlight or heating elements. Dehydration slows the growth of bacteria and prolongs shelf life, which was crucial at times when refrigerators didn't exist. Many dried foods are edible right out of the bag like raisins or dates but, some (like our shiitake mushrooms) need to be rehydrated before they are consumed.

Seaweed & Nori
 | Nori is the Japanese name given to various types of edible seaweed and algae, which are also called laver. The origin of Nori can be traced back all the way to ancient China and Japan around the 8th century. Nori is usually used as a wrap for sushi but it can also be found paired with various Asian dishes such as Onigiri (a Japanese triangle shaped rice ball), miso soup, or just eaten plain as a snack. It has a high mineral salt content and is a good source for iron, calcium, fiber, and many different types of vitamins. The algae used to make Nori grows on the surface of the sea and is farmed using huge nets. In fact, 230 square miles of the Japanese coast line are dedicated solely to the production of Nori, over 300,000 tons of Nori are produced every year. That’s a lot of sushi!

Tofu
 | Eating healthy made easy, with Tofu! Tofu is made from soybeans. Dried soybeans are ground, turned into soymilk, and then the liquid is coagulated to form curds, much like cheese. The soy curds are then pressed together and formed into rectangular blocks, making tofu. Tofu is normally packaged in water to retain its freshness. Tofu comes in three main consistencies: Silken, Soft, and Firm. Although tofu has very little taste and smell of its own, it is known for its ability to absorb whatever flavor it’s paired with. Tofu is low in fat, cholesterol, sodium, and even low in carbs. Tofu is also a good source of B-vitamins, protein, lecithin, isoflavones, and calcium.

Silken Tofu is extremely soft and is usually mixed into other foods like cheese cake filling or smoothies. Soft Tofu is sometimes used in lasagna as a cheese substitute or in miso soups to add texture. Firm Tofu is used as a meat alternative which can be grilled, fried, diced, etc.
Organic Products
 | Eat natural, eat Organic! The term “Organic” when applied to food refers to any food that is grown without pesticides, growth hormones, chemical fertilizers, or genetic modifications (GMO). To be classified as an Organic Product, foods must follow very strict and heavily regulated production standards (much like Kosher foods). Processed organic foods usually contain only organic ingredients, if non-organic ingredients are mixed in, than 95% of the ingredients must be organic or else the product will not be branded with the seal of approval.
