Fried Rice or Nasi Goreng(in Malay) is not “high class” stuff for the people here in Southeast Asia, instead it is rather cheap if compared with other dishes. However, fried rice is loved by many Asian not only because it is a simple, tasty, substantial, but also cheap in price(not quality).
I have introduced Kampung Fried Rice in my previous post, well, if compared with Kampung Fried Rice, Fried Rice in Kerabu style is more “happening” as there are many more ingredient used in making this single meal dish. If you like noodle, then you should have tried Loh Mee before, or at least you have heard it before. Same as other noodle dishes, i.e curry mee, laksa, wat tan hor, and etc, the soup/gravy play the most important role.    Chinese version of sweet and sour chicken is very much different from the western version, it is treated as a dish that served with steamed rice in Chinese society, usually with other dishes as well, like one plate of stir fried vegie and a bowl of soup. While western version of sweet and sour chicken is normally served as an appetizer, and definitely not served with rice.

Today I am going talk about Yam Cake (Yu Tou Gao), one of my favorite Chinese dim sum. If you have no idea what Yam Cake is, you may think it is sweet dessert, like Cheese Cake, Chocolate Cake, some sweet stuff that Yam is added in, since its name is “Cake”. Though it is a cake, but it is not sweet at all, in fact it’s salty and a bit fishy.
Yam Cake is usually consumed during breakfast or tea time, like Nasi Lemak or Roti Canai, one plate of Yam Cake and a cup of TehTarik already a substantial meal for the Chinese in Southeast Asia. It is very rare to find Yam Cake is consumed during lunch or dinner, simply because it is not a dish. Like other dim sum, Yam Cake is mainly consumed by Chinese, unless it is sold in a Halal restaurant.

I had Har Mee for my dinner yesterday, since it was my very first time to cook my own Har Mee, I wasn’t so sure whether it can taste like one. But after I took the first sip of the Har Mee soup, oh boy oh boy, this is so Real, as good as the Har Mee I had in Penang!

DongZhi, is one of the important festival for Chinese, like any other festival, there must be a special food to accomplish the happiness and specialty of the day, one good example is, mooncake for mooncake festival! Can you imagine Mooncake festival without mooncake? Ah, it doesn’t seems right! So for DongZhi, the special food is Tang Yuan, or in English is called Glutinous Rice Ball in ginger soup. Tang Yuan itself is not sweet, but the soup is, and usually it is very sweet, well,  in fact it is meant to be sweet.
The traditional Tang Yuan is pretty simple, is just made by plain glutinous rice flour and cook in sweet   ginger soup. Kuih Lompang, is one type of dessert that similar to the chinese “Bu Zai Kow”, literally means Cup Cake. They are similar because both also made using same method, using cup as the mold and steamed till cooked. But what make Kuih Lompang different from Bu Zai Kow are, Kuih Lompang added in coconut milk and topped with grated coconut while the other don’t.

Sometimes, you cannot deny that Chinese food have a pretty humor name, like the dish I am going to share with you today: Drunken Prawn. If you like Chinese Kung Fu, you must have watched or heard this famous Chinese Kung Fu Movie called ”Drunken Master” or Zhui Quan before, is a very famous Hong Kong movie starred by Jakie Chen. Well, don’t get confused, there is no connection between Drunker Master and Drunken Prawn here, the Drunken Master definately not get drunk because he has eaten Drunken Prawn, no no, of course not! I mentioned Drunken Master in my post here just because Drunken Prawn have led my thought to this famous Kung Fu movie, hehe, since both are “Drunk”!
Actually, Drunken Prawn got its name through its making process: put the live prawns into a wine pot, let the prawns swim for a while, so that the alcohol can get into the prawn body and make it drunk, then, cook them! See, this is how Drunken Prawn is made!

Do you like Durian? Well, I must agree that Durian is an “extreme” fruit, is either you superb love it or you superb dislike it, all thank to it “wonderful” smell! Maybe because of the culture in Southeast Asia, or perhaps the influence from the elderly people, most Southeast Asian love Durian, they even called it “King of the Fruits”!   I like to use claypot in my cooking, well, not just me actually, most of the Southeast Asian love to use claypot in their cooking, therefore many “Claypot dishes” can be found in this region. Beside Claypot Lao Shu Fen, another famous single meal dish that served in claypot is Claypot Chicken Rice, a substantial and delicious meal that loved by Southeast Asian.  Let’s talk about Belacan or Terasi first, Belacan or Terasi is one type of toasted shrimp paste that gives a very strong notoriously pungent aroma, it is sold in pale liquid or in solid dark-colored blocks. Belacan or Terasi is widely used in Southeast Asian cooking, actually it is a very important ingredient in SE Asian cooking.
We all know Chili Sauce is hot and a little bit sweet, while Belacan is salty and tangy, so when Chili Sauce mix with Belacan, the result is, a special condiment called Sambal Belacan is created.

Mak Zuk Tong Sui
        creamy and smooth chinese dessert

There are so many type of Tong Sui in Southeast Asia, and I have introduced the most famous one in my previous post, Red Bean Soup. Now, let’s make another Tong Sui, how about Mak Zuk Tong Sui? Mak Zuk literally mean Wheat Porridge, it looks like a porridge as it is white, thick and sticky, but it is not salty, of course, it is a Tong Sui (sweet water), how can it be salty?
Coconut milk is used in making this dessert so that it gives a creamy and aromatic taste. Well, since coconut is abundance in this region, it is not surprise that most Tong Sui or dessert in Southeast Asia have coconut milk inside. Actually, coconut milk does enhance the sweetness of the dessert and make it more smoother and creamier, though it is quite fattening, but most desserts are, right?!

Crystal Dumpling Recipe

 One of my favorite Chinese Dim Sum is Crystal Dumpling, it is one type of Jiao Zi, but ingredient used to make the wrapper skin is different from the ingredient used in Jiao Zi. The skin is almost transparent( like crystal), therefore it is called Crystal Dumpling (better than called Transparent Dumpling right!) Besides, the skin of Crystal Dumpling is much more chewy than the normal dumpling, ah, because wheat starch is added in!
The toughest part of making this dumpling is to make the transparent skin, maybe not for you, but for me it is. We got to be very careful when making the dough, especially the quantity of flours and water used, should keep to the right percentage, and we got to keep on stirring when pouring in the boil water. If not, the skin will become too loose and not chewy, and we call this a failed project..
